Halloween vegan pumpkin and chocolate cookies

Hope you’re having a lovely fall! I was feeling in the Halloween spirit this week, so I decided to whip up some cookies for the holiday. I always  hated it as a kid when something was shaped liked on thing but tasted like another–so of course these pumpkin cookies are made with real pumpkin!


Recipe for pumpkins:

  • 1 cup flour
  • 1/3 cup sugar
  • ½ cup pumpkin
  • ¼ tsp salt

Recipe for cats:

  • ¾ cup flour
  • ¼ cup cocoa powder
  • 1/3 cup sugar
  • ½ cup pumpkin
  • ¼ tsp salt

Combine your dry ingredients first, then mix together with your pumpkin. The mixture will seem too dry, but once you knead it together with your hands it will be just right. Flour a surface and roll out your dough to about 1/4″ thick. They come out tastiest when they’re thin, in my opinion! Bake at 350F for 10 minutes. Decorate with melted chocolate once they’ve cooled. I used a mix of white and dark chocolate.

These cookies are low in fat because the pumpkin replaces the fats, and the result is chewy and soft. If you want more of a crisp shortbread texture you can replace the pumpkin with butter in the same amount. Each recipe makes about 9 to 10 cookies.
